In addition to making our own line of sausages, salami, and bacon for Short Creek, we also work with 30+ small farms in the region, helping them bring high-quality USDA-inspected products to market under their own brand. We'd love to work with you, too.

What We Can Do

So much! Salami, sausages (fresh or fully-cooked), bacon, sausage patties, snack sticks. We typically process pork, but we can also handle beef, chicken, turkey, lamb, and bison. Let us know if you have something particular in mind and we can talk about what's possible.

Yield is relative to starting meat weight (e.g., 100 lb of meat yields approximately 85 lb of cooked sausage links). Add 2 weeks to processing time for frozen raw materials.

What We CAN'T Do

Most importantly, we do not offer slaughter services - we are a value-added processor only. We typically require "ready to process" raw materials ( e.g. boneless pork shoulder, skinless bellies) from our co-packing customers. In some circumstances, we may be able accept bone-in cuts and process them for an additional fee.
